Layers of melt-in-your-mouth crust and sweet cream cheese filling, all topped with cinnamon for the perfect Mexican-inspired low-carb dessert.
INGREDIENTS
Dough:
- 1 tablespoon butter, softened
- 2 cups mozzarella cheese
- 3 oz. cream cheese
- 1 egg
- 1/3 cup almond flour
- 1/3 cup coconut flour
- 2 tablespoons Swerve, brown
- 2 teaspoon vanilla
- 1 teaspoon baking powder
Cream Cheese Filling:
- 16 oz. cream cheese
- 3 tablespoons butter, softened
- 2/3 cup Swerve, confectioners
- 2 eggs
- 1/4 cup sour cream
- 2 teaspoons lemon juice
- lemon zest
Topping:
- 2 tablespoons Swerve, brown
- 3 tablespoons melted butter
- 1 tablespoon cinnamon
DIRECTIONS
1: Preheat oven to 350 degrees Fahrenheit.
2: In a microwave-safe large bowl, add in cream cheese, mozzarella cheese, and 1 tablespoon of butter. Melt in the microwave in 30-second intervals until completely melted. Mix together.
3:Add remaining dough ingredients to bowl and knead together. If you have a food processor, you can mix all dough ingredients using the dough blade until combined. If you do not have a food processor, just knead with your hands for about 2 minutes or so. Divide dough into 2 equal portions.
4: In an 8×8 dish, place parchment paper on the bottom for easy cleanup. Press 1 of the dough discs in the 8×8 dish to create the bottom layer crust.
5: In a large bowl, add in all ingredients for cream cheese filling. Mix together using a handheld mixer on low until smooth. Pour cream cheese filling on top of the bottom crust.
6: Roll out remaining dough disc and place on top of cream cheese filling.
7: In a small bowl, melt 3 tablespoons of butter. Add in 2 tablespoons of brown Swerve and 1 tablespoon of cinnamon. Stir and pour evenly over dough.
8: Place in the oven for 50-60 minutes. This sopapilla will rise so make sure to keep an eye on it. After baking, remove from oven and let cool for at least 20 minutes before cutting into bars.
