3 Ingredient Healthy Chocolate Cookies
I’ve been making banana oat cookies for a while now, in fact, I’ve tried just about every optional mix-in you can image with this simple cookie recipe: white chocolate cranberry, cinnamon raisin, chocolate walnut, raspberry vanilla, you name it! My family eats them a lot for breakfast.
Introduction
4th ingredient of vanilla extract is optional.

Ingredients

- 1 medium RIPE Banana, mashed

- 1/2 cup rolled oats

- 1 TBSP Semi-sweet chocolate chips
- 1/2 teaspoon vanilla extract (optional)
Tips
Seriously, lightly grease baking sheet or line with parchment or other non-stick liner.
Directions
Preheat oven to 350.
Mash banana in bowl.
Add oats slowly until mixture has a thick batter consistency.
Fold in chocolate chips (and vanilla extract, if desired.)
Grease or line baking sheet with parchment – these babies WILL stick!
Spoon batter onto baking sheet into 4 equal portions. Press down with a fork or spoon to flatten into a cookie shape – these won’t spread during cooking.
Bake about 15 minutes, or until edges begin to brown.Serving Size: Makes 4 cookies
